Yes, two fit comfortably, three becomes a rush. The smoothest combination is Chantilly in the morning and Senlis or Vaux-le-Vicomte in the afternoon, because the distances between them stay short. Versailles and Fontainebleau on the same day is possible but leaves little time for each, since they sit on opposite sides of Paris.
For Versailles, the train is a fair option: the station is close to the castle. For Fontainebleau, Chantilly and especially Vaux-le-Vicomte, the station leaves you several kilometres from the gates, with a bus or taxi connection that dictates your return time. The van drops you at the entrance and picks you up when you come out.
Yes, that is the whole point of hourly disposal: the driver stays on site while you visit, with your belongings safe in the vehicle. The rate is hourly, €96 per hour, with a minimum of 3 hours. For a day covering two castles, this is almost always cheaper than four separate one-way trips.
